Then a hose on low pressure to knock product off, a foam gun that lays chemical onto every surface, dwell time, hand scrubbing with color-coded brushes on the hard spots such as belt edges, under guards, and inside hoppers, and a thorough rinse. A sanitizer pass follows, with the concentration checked by test strip. The operator moves in a set order from clean to dirty and from high to low so nothing gets recontaminated.
A head camera on the operator captures where they are looking, which is the thing an inspector wants to know and a model needs to learn: the gaze under the conveyor return, the check inside a pump housing, the inspection of a gasket. Fixed cameras cover the line from two ends. Recording runs through the full sanitation shift in operating plants, with no staging.
What a researcher receives is each piece of equipment as an episode, segmented into disassembly, dry clean, rinse, foam, scrub, rinse, sanitize, inspection, and reassembly. Labels are plain language. Each episode carries a pass or fail based on the plant's own visual and swab inspection, and failures note where residue was found. Optional tracking covers hands, hose, brushes, and parts.
